One of my favorite ways to make salmon – its adds a sweet softness to the fish that you just can’t put your fork down. I know I always struggle with new ways to prepare the salmon, since it is such a staple in our kitchen, but we all get bored with the same old grilled or baked fillets. Pairs well with a simple mixed green salad or some brown rice. In a nutshell: this is a quick and delicious dinner that you cannot pass up.
1.5 lbs wild salmon fillets
Sea salt and ground pepper to taste
1/4 cup maple syrup
1.5 tbs yellow mustard
1.5 cup sliced pineapple
Preheat oven to 450 F.
Line a rimmed baking pan with parchment paper. Transfer salmon to pan and season with salt and pepper to taste.
In a small pan, on medium heat, combine the syrup and mustard and stir until fully incorporated.
Add the pineapple to the salmon (atop and around) and glaze/brush the fish and the fruit with the maple sauce.
Bake for 20 minutes or until fish cooks through – time varies with thickness of fillets.
Yields 4 servings.
