A light, fresh and summery Berry Salad with Honey and Lemon Yogurt Dressing in a honey and lemon yogurt dressing!

ingredients
    For the dressing:
  • 1/2 cup greek yogurt
  • 2 tablespoons honey
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • For the Berry Salad with Honey and Lemon Yogurt Dressing:
  • 1 cup strawberries, sliced
  • 1 cup blackberries
  • 1 cup blueberries
  • 1 cup raspberries
  • 1 tablespoon finely chopped mint
directions
    For the dressing:
  1. Mix everything.
  2. For the Berry Salad with Honey and Lemon Yogurt Dressing:
  3. Toss the berries and mint with the dressing and enjoy right away or after chilling in the fridge for 30 minutes.

Option: Add orange juice and zest! (Or replace the lemon juice and zest.)
Option: Add torn basil in addition to or in place of the mint!
Option: Replace some or all of the Greek yogurt with yogurt or mascarpone!
Tip: If you are taking this salad on the road, keep the dressing separate and mix just before you serve.
